FAQs
What is a sous vide circulator?
At the basic level a sous vide circulator is a heating element. The circulator is placed into a vat or pot of water to heat it to, and maintain, the precise temperature of your choosing. Food, sealed in plastic or silicon bags, is then placed in the hot water to slowly cook. The ‘circulator’ part of the machine moves the water constantly to ensure consistent heat throughout the container – rather than hot water near the element, cooling near the side of the container.
What do I use a sous vide circulator for?
A sous vide circulator ensures that food is cooked at a precise temperature: the hot water cooks the food evenly without burning the outside. This makes it the perfect piece of catering equipment for cooking steaks, fish and flavour-filled vegetables. If you want the delicious looking grill lines, or dark, seared colour, you can still do that, just quickly at the end.
Why should I use a sous vide circulator?
Using a sous-vide circulator means you can rely on perfectly cooked food 100% of the time – this isn’t kitchen guess work, its science! This method does take longer than searing or grilling, but because this is hands-off time it means you can turn your attention to sides and sauces whilst the circulator maintains precise temperature for a perfect cook.
The circulator is also a great way to prepare food in bulk in advance of a large and busy event. Once cooked in the sous vide, your items can be kept frozen or refrigerated, ready to be reheated with a quick sear on site before plating.
How do I use a sous vide circulator?
The sous vide circulator is clipped to a metal vat, or a cooking pot filled with water. The heating element must be submerged, whilst the buttons and digital display sit clear of the water. You then choose your temperature on the digital display – the circulator will bring the water to this temperature and gently move it, ensuring all the water stays at this temperature throughout the container.
You then need to seal your food (steak, pieces of fish, vegetables) into a plastic or silicon bag, with any herbs of flavourings and remove the air. The bag then goes directly into the water where it cooks slowly at a consistent heat. Set the timer, and the sous-vide circulator will let you know when it’s ready!
What can I cook with a sous vide?
Sous vide circulator is probably best known for producing a perfect steak, but you can cook everything in here, from potatoes to eggs!
